A-E-I-O-Aioli 😜 I LOVE when I find brands that are also saying “I see you Product X, yes I see you but I know we can make you BETTER” 🤗 (If you weren’t aware this is how I approach my #food & #recipes generally ☺️).

Due to a historical lack of this ingenuity in the condiment market I haven’t actually had #mayonnaise or any of its derivatives for ~10 years 😳 I know I could make it myself but on a day to day basis I ain’t whisking for that long chaps, FOMO be dammed I can’t be bothered 😂.

Enter stage left @hunterandgatheruk however & all thoughts of creamy sauce famine have been banished from my mind 😍 These wonderful people use only the highest quality cold pressed avocado oil as the base for their jars of #deliciousness 💛 They also don’t add anything random or extra that led me to lunge firmly away from their contemporaries in the past 👏🏻.

Here I have tumbled their amazing garlicky mayonnaise with mushrooms & parsley to top a simple piece of baked wild trout ✨ The basis of an epic meal in mere minutes with minimal washing up 🙌🏻 What could be better ey?!.

{TROUT WITH AOILI MUSHROOMS} Serves 2.
2 x 135g pieces wild trout or #salmon .
400g #organic #mushrooms .
1 large handful fresh parsley.
1 heaped tbsp @hunterandgatheruk garlic mayonnaise.

Place your fish on a lined tray & bake for 12-15 mins at 200C until firm.
Meanwhile slice your mushrooms, add to a dry pan on a medium heat & leave to cook for 2 mins. They’ll start to naturally release liquid, wait until this happens then flip & cook for another 1-2 mins. Finely chop the parsley, turn the heat off & mix through the mushrooms with the mayonnaise.
Serve your fish topped with your divine mix, add roasted roots, extra greens, rice or anything else you fancy!.
