Corn Of Plenty

Corn Of Plenty 🌽 I ALWAYS have #hummus in my fridge, come rain, shine, hell, high water or nuclear apocalypse it would be a worrying rarity for me to go a day without consuming a #dip of some sort 🙈.

In terms of WHY (bar the obvious that they’re #delicious ) we have the fact that they are super convenient, high in fibre, protein & unsaturated fats, incredibly quick to make & can be adapted to any & all flavour combinations you could ever desire 😍 This particular version being inspired by the fabulous Jamie AKA @dishingouthealth who shared a charred corn & jalapeño #recipe last week 👏🏻.

I’ve played around with the textures & flavours, opting for soaked @buywholefoodsonline macadamias in the place of classic tahini, caramelised onions for the jalapeños & I’ve also bumped garlic to the kerb to allow those mellow & sweeter notes to take centre stage 💛.

So yep if you don’t dip already my friends I suggest you grab yourself some chickpeas & get charring those kernels 🤸🏻‍♀️ Your #savourysnack scenario will never be the same…..🙌🏻.

{CHARRED CORN & CARAMELISED ONION HUMMUS}.
1 onion.
1/2 tbsp @rawvibrantliving extra virgin olive oil.
2 cups frozen/fresh corn kernels.
1/4 cup @buywholefoodsonline macadamias.
1 x 400g can chickpeas.
Juice of 1/2 a lemon & 1/2 an orange.
Salt & pepper to taste.
Water to thin.
Fresh coriander to serve.

Add your nuts to a bowl, cover with water & leave to soak overnight. Preheat your oven to 200C, line a tray with a silicone mat or parchment paper.
Roughly chop the onion, separate the layers, toss with the oil & bake for 15-20 mins until crisp & golden.
Add the corn kernels to a dry pan, heat on medium & stir occasionally until lightly golden.
Drain the nuts, rinse & add to a food processor with the onion & most of the corn (save some to decorate). Blend to a rough paste. Add the drained chickpeas & citrus juices. Blend again & thin to your desired consistency with water, taste then season.
Serve topped with the reserved kernels & chopped coriander.
