Meatball Moments

Meatball Moments 😍 I don’t eat meat particularly often but I suddenly had a craving for these EPIC herb & veggie packed #meatballs so I just HAD to whip up a batch 🤗.
Now this #recipe has been knocking about my kitchen for a LONG while but weirdly I haven’t ever photographed them to share 🤷🏻‍♀️ (A CRYING shame as they taste SO GOOD 😱).
A key point to highlight with regards to the meat is that I ONLY use organic, #grassfedbeef (both from an animal welfare & a health/nutrition standpoint) PLUS it 100% tastes better in my opinion👌🏻 I also bake these beauties which gives them a fantastic texture (soft in the middle, slightly crisp on the outside) AND choose to serve them with lovely light veg rather than a heavy sauce, making them more appropriate for this time of year 🙌🏻.
So yep they’re awesome & you still have ample time to chuck out your original #fathersday lunch plans & make these instead….😂 OR make them for yourself & refuse to share….😜.

400g #organic #grassfed beef mince.
1 onion.
2 celery sticks.
2 cloves of garlic.
1/2 fennel bulb.
1/2 large bunch parsley & a large handful fresh dill.
Zest of 1 lemon.
Salt & pepper.
To serve – celeriac & potato purée + your chosen #greens or other veggies.
Preheat your oven to 200C.
Finely dice the fennel, onion & celery, add to a sauté pan with 1/2 tsp coconut oil. Sweat on low for 15 minutes until soft, stirring occasionally.
Crush the garlic, add to the pan, stir through for 2 mins then decant into a large bowl. Leave to cool for 5 mins.
Finely chop the herbs & add to the veg with the lemon zest. Mix well.
Crumble in the beef mince & use your hands to combine well. Roll into balls & arrange in a dish.
Bake for 15 mins, turn & bake for a final 10 mins.
Serve with your chosen accompaniments.
