Monday Mood πŸ‘πŸ» If you asked me where last week went I could probably get you to Tuesday #lunch time & then dissolve into nonsensical guttural sounds….πŸ™ˆ (It was a tad busy).

ANYWAY my overflowing clinical calendar to 1 side πŸ€ͺ this morning we are DIVING into the new week with 1 of my favourite #vegetarian #breakfasts 😍 (or lunches or dinners let’s be real here).
.
I personally buy into the camp that our morning meal (whatever time you choose to have it, my #intermittentfasting friends I got you πŸ‘ŒπŸ») SHOULD be our most abundant ✨ I mean it’s what you’re going to literally fly on for the most dynamic part of the day RIGHT 😁.
.
So when it comes to piecing together a plate like this you’d be right in expecting all the various vibrant colours going on 🌈 (those photo pigments = antioxidants = the integral cofactors to allow us to produce energy) the 2nd element of those beautiful veggies being fibre to fill me up & look after my #guthealth πŸ’«.
.
Next up we then get a bounty of protein from a baked #avocado #egg , my super seed crackers & a NEW discovery πŸ‘‰πŸ» @organicorealfoods chilli & hemp pate which I’ve blended with a little @nushfoods almond cheese for a silky smooth finish 🀀.

{AVOCADO EGG BOATS} Serves 1-2.
1 avocado.
1-2 #organic #eggs .
Salt, pepper, chipotle flakes or seasoning of choice.
.
Preheat your oven to 200C, grab a muffin tin or silicone muffin liner or anything to stand the #avo halves in whilst cooking.
Scoop out some of the inside to make a depression to hold the eggs, crack em in, season & bake for 10-15 mins until golden & firm.
Serve hot or cold (I always make 2 & then have 1 later if I’m not sharing 😊).
