The Holy Trinity ✨ Eggs, #avocado & smoked salmon, IS there ANY combination more synonymous with a leisurely #sundaymorning 😃 (No, no there isn’t 🤫).

And actually this #breakfast is SO simple to make you could easily whip it up during the week TOO 🤗. .
One of the 1st things I’ll tend to encourage people do is take a 2nd look at their morning meal 🧐 Are they including any veggies?? Is there a good portion of protein in there?? What about those wonderful healthy fats??.

Quite often the proportions aren’t quite in the right ratios but a few tweaks & HEY PRESTO we feel more energetic, more satisfied & even MORE AWESOME than we did already ✨.

{GREENS, EGGS & SALMON} Serves 2.
1 large courgette turned into noodles (use a #spiralizer or peeler).
2 #organic #eggs .
2 heaped tablespoons @holymolydips breakfast avocado.
4-6 slices #smokedsalmon .
Black pepper, @everything_but_the_bagel seasoning & lemon wedges to serve.

Preheat your oven to 200C, line a tray with a silicone mat.
Add your courgette noodles to a dry pan, heat, tossing occasionally, for 3-4 mins until the water has evaporated off.
Use tongs to create 2 large nests on your lined tray, crack an egg into the centre of each & bake for 8-10 mins until the eggs are done.
Transfer to plates with your salmon & avo, add lemon, season & serve!.
