The Original Shortie πŸ€ͺ In a land of toast I wanna be a #cookie πŸͺ & not just ANY #chocolatechip encrusted #biscuit bonanza OH NO, I wanna be a full on flavour sensation that feeds my soul & body in EQUAL measure πŸ™ŒπŸ».

I always talk about #food as a multi-factorial & multi-sensory thing 🀩 Yes all my #recipes have a health conscious spin on them but equally as important is the enjoyment element 😍 & if I am remaking a classic like #chocolatechunk #shortbread it OBVIOUSLY has to be on a level with the original otherwise I’ve kind of failed in the whole exercise haven’t I…..πŸ™ˆ.

Well luckily for us all these babies are as far from failure as they could possibly be πŸ™ŒπŸ» They have the characteristic crumble, the buttery layers of flavour, the light sweetness but not actual sugary-ness & they hold they’re own when met with a proper cup of tea πŸ‘ŒπŸ».

Saying all that of course they are ALSO naturally #glutenfree #dairyfree & contain a smidgen of the sugar content you’d find in a regular biscuit because I’ve cleverly found that taste ELSEWHERE 🀭.

HAPPY TUESDAY 😘 #plieblingnutrition .

{ALMOND & BAOBAB CHOCOLATE CHUNK SHORTBREAD} Makes 10-12.
1.5c @buywholefoodsonline tapioca flour.
1.5c ground almonds.
2/3c melted coconut oil.
1/4c @bionaorganic coconut sugar.
1 heaped tbsp @afyauk baobab.
1 egg.
1tsp baking powder.
1 bar @seedandbeanchocolates extra fine dark lavender chocolate.

Preheat your oven to 175C, line a tray with parchment or a silicone mat.
Add all the dry ingredients to a bowl, mix to combine. Crack in the egg & add the melted coconut oil, mix to a dough then break in your chocolate.
Use your hands to combine then pinch off tablespoon sized pieces. Press into a cookie cutter to form your #biscuits .
Bake for 13-15 mins until golden, leave to cool on the tray for 10 minutes then transfer to a wire rack.
Use within 3-4 days or freeze for up to 3 months.
